Questa è la prima volta che provo a preparare una torta con il mango, anzi una torta morbida al mango vegana, essendo il mango uno dei miei frutti preferiti in assoluto. Non ho idea del perchè io abbia aspettato così tanto tempo! Non solo è venuta buonissima, ma anche morbidissima, così da riuscire a conservarsi perfettamente per almeno 2 o 3 giorni fuori dal frigo.
Questa torta morbida al mango è molto dolce, ma non ho usato zuccheri raffinati ed è completamente vegana e senza glutine.
Ecco cosa ho utilizzato per un classico stampo da plumcake / pane in cassetta:
Ingredienti torta morbida al mango vegana
- 2 mango maturi
- 100 gr di farina di miglio o di mandorle
- 30 gr di farina di avena senza glutine
- 20 gr di farina di cocco
- 30 gr di amido di mais
- 90 gr di stevia (sulla confezione che ho utilizzato io indicava di usarne in quantità 1:1 come lo zucchero)
- Una bustina di lievito (veg ok)
- 5 gr di bicarbonato
- 130 ml di latte vegetale a scelta
- 90 ml di olio di cocco fuso
Procedimento
Per prima cosa sbucciamo e tagliamo a pezzetti il mango. In una ciotola aggiungiamo poi al mango tagliato tutti i nostri ingredienti solidi, quindi le farine, l’amido, la stevia, il lievito e il bicarbonato.
A questo punto andiamo ad aggiungere gradualmente il latte e l’olio di cocco, mescolando per bene per evitare la formazione di grumi e fino ad aver creato un impasto omogeneo.
Attenzione!
Non vi allarmate se l’impasto vi sembra essere molto liquido, nel giro di un paio di minuti la farina di cocco assorbirà molto liquido. Inoltre, in generale, questa torta resta davvero molto morbida e molto umida all’interno, anche a causa del mango (va mangiata con una forchettina, per capirci).
A questo punto foderiamo lo stampo con un foglio di carta forno inumidito e versiamo il composto. Inforniamo in forno preriscaldato a 180 gradi e cuociamo per circa 50 minuti (facendo sempre la prova dello stecchino).
