Oggi vi propongo la ricetta del gazpacho andaluso, la zuppa estiva per eccellenza. In giro si trovano davvero molte ricette per preparare il famoso gazpacho, tutte si differenziano per qualche piccolo dettaglio e oggi ho pensato di condividere con voi quella che normalmente utilizzo io, date anche le temperature ancora decisamente estive un po’ ovunque che permettono di gustare al meglio questo piatto 🙂 🙂

Gli ingredienti che vi sto per dare corrispondono alle dosi per 2 porzioni se si decide di servire il gazpacho come primo piatto, o per 3 porzioni se mangiato come antipasto, magari servito in piccoli barattolini con cannuccia.

Gazpacho andaluso

Ingredienti gazpacho andaluso

Ecco cosa ho utilizzato:

  • 300 gr di pomodori maturi (corrispondono a 3 pomodori di medie dimensioni)
  • 1 peperone rosso
  • mezzo cetriolo
  • 2 spicchi d’aglio
  • 1 cipolla grande (nel mio caso due piccole), io preferisco quelle rosse per il loro gusto più deciso, per chi non ama particolarmente la cipolla, una bianca andrà benissimo
  • 2 cucchiai di aceto di vino rosso
  • 3 cucchiai di olio evo
  • 3 cucchiai di pangrattato
  • sale e pepe a gusto
  • 150 ml di acqua


Per prima cosa laviamo i pomodori e il peperone, sbucciamo il cetriolo e la cipolla e tagliamo tutto a pezzetti grossolanamente.

Versiamo i pomodori, il peperone, il cetriolo e la cipolla tagliati a pezzetti nel mixer e aggiungiamo i due spicchi d’aglio, il pangrattato, l’olio e l’aceto e facciamo andare per circa 15/20 secondi, se necessario aprire, mescolare e far partire il mixer una seconda volta per qualche secondo.

Una volta ottenuto un composto omogeneo aggiungiamo 150 ml di acqua a temperatura ambiente e aggiustiamo di sale e pepe, mixiamo poi per altri 10/15 secondi.

Il nostro gazpacho è già pronto, l’unica cosa ancora da fare è lasciarlo riposare in frigo per almeno un’ora!
Io ieri sera l’ho servito con una foglia di basilico fresco a decorare e con dei crostini integrali.
