Gateau di patate vegetariano

Il caldo continua a non scalfire la mia forza di volontà, ovver continuo ad accendere il forno nonostante le temperature sopra i trenta gradi 😀 Durante il weekend scorso, in particolare, ho preparato questo gateau di patate vegetariano, in versione non eccessivamente pesante, con un ripieno di mozzarella light e di spinaci.

Potete provarlo anche in versione vegana, con mozzarisella al posto della mozzarella e del lievito alimentare in scaglie al posto del pecorino, penso che lo proverò anch’io al più presto in questa versione.

Ingredienti gateau di patate vegetariano

Ecco cosa ho utilizzato per 4 porzioni:

  • 1kg di patate (io ho utilizzato patate gialle, fatta eccezione per due patate dolci, per questo il colorito un pò più aranciato
  • 200 ml di latte (io ho usato quello vegetale perché è l’unico che tengo in casa)
  • 1 uovo
  • 200 gr di spinaci
  • mezza cipolla bianca
  • 1 mozzarella light
  • 50 gr di pecorino grattugiato
  • una manciata di pangrattato (qb)
  • sale e pepe qb

Procedimento

Per prima cosa peliamo le patate, tagliamole a cubi grossolanamente e facciamo bollire in acqua per circa 20 minuti o fino a quando le patate non risulteranno morbide (provare con la forchetta).

In una padella, nel frattempo, far dorare la cipolla e aggiungere poi gli spinaci, facendoli saltare per alcuni minuti. Salare e pepare a piacere.

Tagliare la mozzarella a fettine sottili.

Una volta cotte le patate, scoliamo l’acqua e schiacciamole con uno schiacciapatate. Aggiungiamo l’uovo, il latte e il pecorino. Saliamo e pepiamo a piacere e mescoliamo bene.

Ungere leggermente una teglia e versare circa la metà del composto di patate. Livellare con il dorso di un cucchiaio e andare ad aggiungervi uno strato di fettine di mozzarella. Creare un altro strato con gli spinaci e infine nuovamente con la mozzarella.

Coprire con la metà restante di composto di patate. Cospargere infine la superficie con una manciata abbondante di pangrattato.

Infornare in forno già caldo a 200 gradi per circa 25 minuti (controllare che la superficie sia leggermente dorata).
